In this hot summer season in every house we can find many kind of vegetables. Among them brinjal is a common one which many people like to eat. So here is a recipe of brinjals which we can easily cook and make our family happy. 



Brinjal's  pickle


Ingredients
Fresh brinjal-800 gm, 
tamarind paste- 2 ½ table spoon, 
red chilli powder- 2 tea spoon, 
coriander powder - 2 tea spoon, 
green chilli- 8 pieces, 
mustard paste- 2 table spoon, 
sahi garam masala powder-  2 tea spoon, 
mustard oil-1 ½  cup, 
salt- 1 table spoon, 
sugar to taste, 
vinegar- 1 table spoon, 
ginger paste- 2 tea spoon, 
cumin fried powder – 1 table spoon, 
turmeric powder- 1 ½ tea spoon, 
red chilli- 6 piece, 
jagger for taste, 
five condiment powder- 1 table spoon

Process :  
Wash the brinjals with fresh water and keep aside for sometimes. 
Next cut the brinjal into cubic pieces, mix turmeric and salt and keep aside for 30 minutes. This process help to reduce the stickiness of brinjal.
Then, take a frying pan and put mustard oil for heating. After heating it put brinjals which is blended by salt and turmeric powder and fry it. 
Then remove the fried brinjals from the pan and put ginger, turmeric powder, red chilli and other ingredients and fried for sometime. 
Take another pan and put 2 table spoon of vinegar and salt, mixed the fried brinjal with it properly and cover the lid for 10 minutes with the slow flame. 
After 10 minutes remove the lid and put green chilli, remaining condiments and mixed it with the recipe again cover the lid for 10 minutes. 
Now take a small bowl and mixed the tamarind paste and jaggery. Now remove the recipe and mixed the paste of tamarind and jaggery with it very carefully. Again put the recipe on the flame and mixed the rest of the vinegar, garam masala and condiments.


Now the yummy and delicious Brinjal's Pickle is ready to eat.


Chiwda- Brinjal curry


Ingredients : 
Brinjal- 500 gram, 
mustard oil- 1 table spoon, 
ginger paste – 1 tea spoon, 
curd- 2 table spoon, 
green chilli- 6 pieces, 
turmeric powder and coriander powder -1 tea spoon, 
sahi garam masala powder- 1 tea spoon, 
fried chiwda, chopped onion, garlic paste – 1 tea spoon, 
small tomatoes- 2 (in cubic piece), 
salt for taste, 
red chilli powder half tea spoon, 
fried jira powder- 1 tea spoon, 
sugar- 1 tea spoon.

Process :

Cut the brinjal into cubic pieces. Put some salt in it and pour water, keep it  for 20 to 25 minutes. It  help to lessen the stickiness of brinjals. 

Pour some mustard oil in a frying pan and heat it. Then add turmeric powder, salt and brinjal and fry until it colour changes to brownish. 

Now remove the brinjal from pan and put the chopped onion into the same pan. Add ginger paste, garlic paste , curd with the fried onion,water and sauté it properly. Put 1 table spoon of salt in it. 

Take the fried brinjal, add sugar, chopped tomato, and stirred it properly and cover the recipe with a lid for seven minutes. Now remove the lid and add some fried chiwda and leave for cooking in a slow flame and again cover it for 2 minutes. 

Then remove the lid and put 1 table spoon of mustard oil and leave the recipe for 2 minutes seething. 

Finally remove the recipe from gas and garnish it with fried chiwda.


Your lovely Chiwda-Brinjal curry is now ready to serve.
